Middle Eastern Sliders Recipe

Ingredients

4 pita breads
1 1/2 pounds ground beef
1 teaspoon ground cumin
Salt and pepper
1 romaine heart, thinly sliced crosswise
1 cup grape tomatoes, halved
1/2 cup dill pickle slices
1 tablespoon extra-virgin olive oil
1 tablespoon fresh lemon juice, plus lemon wedges for serving
3/4 cup store-bought hummus

Directions

Preheat a grill to medium-high. Stack the pitas and wrap in heavy-duty foil; place on the grill and cover to warm.

In a large bowl, combine the beef with the cumin, 3/4 teaspoon salt and 1/4 teaspoon pepper; shape into twelve 1/3-inch-thick patties. In another large bowl, combine the romaine, tomatoes and pickles; toss with the olive oil and lemon juice and season with salt and pepper.


Remove the pitas from the grill. Transfer the beef patties to the grill, cover and grill for 2 minutes on each side for medium. Spread each pita with some of the hummus, then top with some of the salad and 3 patties. Serve with the lemon wedges.

Ingredients


2 tablespoons ghee
1 medium onion or 125 g, chopped
1 whole chicken, skinned, cut into 8 pieces
2 cloves garlic, crushed
2½ tablespoons omani mixed spicess
2 medium tomatoes or 300 g, peeled and diced
2 tablespoons tomato paste
2 dried limes, cut into halves
2 cubes MAGGI® Chicken Bouillon
½ cup coriander leaves or 35 g, jiljilan, chopped
5 cups water or 1250 ml
1 tin canned chickpeas or 400 g, dingo, drained
1 medium potato or 250 g, peeled and cut into large cubes
2 baby zucchini or 200 g, cut into large cubes
1 medium carrot or 150 g, peeled and cut into large cubes

Preparation

Heat the ghee in a large pot, cook onions for 4-5 minutes or until they become golden in color.

Add chicken and cook for 5 more minutes. Add the garlic, Omani mix spices, tomatoes, tomato paste, dried lime, MAGGI® Chicken Bouillon cubes and coriander. Stir for 2 minutes.

Add water and bring to boil then simmer for 10 minutes. Add chickpeas, potatoes, baby zucchinis and carrots. Bring to boil and simmer on low heat with occasional stirring for 20 minutes or until chicken and vegetables are cooked.

Turkish Pizza Recipe

Ingredients

5 ounces ground lamb
1/2 red onion, chopped
2 teaspoons hot paprika
Salt and pepper
2 tablespoons EVOO
1 lemon, finely zested and cut into 4 wedges
1 pound store-bought pizza dough, shaped into 4 disks
1 tomato, thinly sliced
1/3 cup chopped parsley

Directions

In a medium bowl, combine the lamb, one-third of the onion, 1 tsp. each paprika and salt and 1/2 tsp. pepper. Form the mixture into a patty.
Preheat a grill to medium. In a small bowl, combine the EVOO, lemon zest and the remaining 1 tsp. paprika. Drizzle the seasoned oil on a baking sheet; turn the dough disks in the oil. Press each disk into a 6-inch round.
Place the lamb patty on the grill and cook, turning once, for 5 minutes. Meanwhile, place the dough on the grill, cover and cook until it bubbles on top and grill marks appear underneath, about 3 minutes. Flip the crusts and, working quickly, top with the tomato slices and remaining onion. Cover and cook until baked through, about 3 minutes.
Finely chop the grilled lamb and sprinkle on the pizzas; top with the parsley. Serve with the lemon wedges.

Tip Press dried oregano into the dough before grilling to add flavor. You may already have it in your spice rack, which means no extra cost!
Tip An Extra Buck Will Buy You...Chop the mint and stir it into the yogurt for an instant sauce to drizzle on the pizza.

Pistachio Baklawa Recipe.

Ingredients

for the syrup:

2 cups sugar or 400 g

1 cup water or 250 ml

1 tablespoon lemon juice

for the baklawa:

15 sheets filo pastry, thawed if frozen

¾ cup butter or 150 g, melted

¼ cup caster sugar or 50 g

1 cup ground almonds or 100 g, mixed with the caster sugar

for the filling:

2½ cups pistachio nuts or 375 g

1 tablespoon blossom water

2 tablespoons rose water

1 tin NESTLÉ® Sweetened Condensed Milk or 397 g

3 slices toast bread, crust removed

Preparation

To prepare the syrup:

In a small pot, dissolve sugar in water and bring to boil then simmer until it becomes a syrup. Stir in lemon juice and set aside to cool.

To prepare the filling:


Combine all ingredients for the filling in a blender; beat until well combined and set aside.

To prepare the baklawa:

Grease a 40cm x 30cm oven tray, place 1 sheet of filo pastry, brush with butter and repeat the same with 5 more sheets.

Carefully spoon the filling all over the pastry.

Place 1 sheet of filo pastry to cover the filling, brush with butter and sprinkle with a little of almond mixture.

Top with another sheet. Sprinkle with little almond mixture and repeat method with the remaining sheets.

Brush the surface with melted butter, then cut parallel lines through pastry and filling to get diamond shaped pieces.

Bake in a 185°C preheated hot oven for 25-30 minutes or until it becomes golden color.

Pour the cool syrup over the baklawa as soon as it comes out of the oven.

Ingredients

for the dough:

2 cups butter or 400 g, softened

5 cups plain flour or 700 g

1 teaspoon lemon zest, grated

1½ cups icing sugar or 200 g

4 egg yolks

for the filling:

1½ cups date paste or 300 g

1 tin NESTLÉ® Cream or 170 g

2½ cups ground almonds or 250 g

Preparation

Mix the soft butter with the flour using your hands until the mixture is homogenous.

Make a hole in the middle of the dry mixture. Add lemon zest, icing sugar and egg yolks. Use your fingertips to mix the ingredients together.

Mix the dough well until it can be formed into ball then knead it lightly pressing with hands until it is smooth. Divide into 2 equals balls, cover and chill for at least ½ hour or until almost firm.

Meanwhile, combine in a bowl the date paste, NESTLÉ® Cream and ground almond and mix well until well combined.

Generously sprinkle flour over the first dough and place it between two sheets of greaseproof paper. Gently roll it between the papers to get 3mm thick dough. Repeat the same process for the second dough.

Place the first one over a large tray keeping greaseproof paper below and removing the upper one. Spread and press the date mixture evenly all over the rolled dough.

Turn the second rolled dough over the date paste mixture by removing the upper paper and keeping the below one to ease turning the dough over the date paste mixture. Press gently and place in the freezer for few hours until it freezes.

Slice out bite shapes using a sharp knife, place cookies 1cm apart on greased large baking tray. Keep aside to defrost and bake in a 200˚C preheated oven for 20-25 minutes or until top becomes light brown.

Remove from oven and set aside to cool.

Ingredients

2 cups ground almonds or 200 g

1 cup plain flour or 140 g

2 eggs

1 teaspoon vanilla essence

1 tin NESTLÉ® Sweetened Condensed Milk or 397 g

1 teaspoon baking powder

¾ cup butter or 150 g, melted

½ cup sugar or 100 g

150 g strawberry jam

Preparation

Combine all ingredients in a bowl except for the jam. Mix well then pour the mixture into a 28cm x 24cm greased baking dish and lined with baking paper extended from both opposite sides.

Bake in a 175ºC preheated oven for 35-40 minutes or until top is golden.

Allow to cool properly, spread strawberry jam on top then cut into slices and serve.

Ingredients

for the base:

2½ cups digestive biscuits or 250 g, crumbled

½ cup butter or 100 g, melted

for the filling:

1 tin NESTLÉ® Sweetened Condensed Milk or 397 g

2 cups water or 500 ml

½ cup corn flour or 60 g

1 tablespoon blossom water

500 g strawberries, trimmed, washed and cut into halves

5 tablespoons strawberry jam

Preparation

Combine biscuit crumb and butter in a bowl, rub the ingredients to form a dough, press dough over the base of a 24cm lose bottom cake tin, and then set in the fridge for 10 minutes.

Place NESTLÉ® Sweetened Condensed Milk , water and corn flour in a large saucepan, bring to boil with constant stirring until mixture thickens. Add blossom water and stir.

Pour hot cream mixture over the prepared cake tin. Set aside to cool into a room temperature. Arrange strawberries over the cream mixture.

Heat strawberry jam in a small saucepan until it boils then pours the jam using a spoon over the strawberries.

Egyptian Falafel Recipe I

Ingredients:

  • shell fresh or frozen fava beans of their pod and exterior skins
  • 1 clove garlic
  • 1/2 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp baking powder with scallion greens
  • parsley
  • cilantro
Preparation:
  • In a food processor, puree the fava beans, garlic, salt, cumin, and baking powder with scallion greens, parsley, and cilantro.
  • Form the falafel mixture into a ball, dip in toasted sesame seeds, and flatten. Refrigerate.
  • Fry the falafels in vegetable oil and brown and crispy on both sides.
To make this dish something special, serve the falafels with a tahini dipping sauce:
  • Add 1/2 cup tahini, 1 cup water water, juice of 1/2 lemon, 2-3 garlic cloves, salt to taste, and 1 tsp cumin to a food processor.
  • Process until the mixture is smooth.
